Pea and Spinach Mash
I was going to call this recipe Mushy Peas because that is precisely what it is, but I feel like that screams retirement village & I promise it is anything but! Even people who normally avoid peas will find it hard to resist this – it is so full of flavour, delicious and nutritious. Just the way nutrition should be!
- 3 cups frozen baby peas
- 3 cups baby spinach
- 1T butter
- Zest and juice of 1 large lemon
- 1/3 cup grated fresh Parmesan
Cook peas in salted boiling water until tender. Drain well, and place in a food processor with the spinach, butter, lemon zest and juice & cheese. Process until well combined but still a little chunky. Taste and season.
